Recipe - Pumpkin Mug Cake

It's that time again, where you see store fronts filled with crates and crates of pumpkins! Pumpkin is a delicious vegetable rich in antioxidants, vitamin A, and fiber. In honor of the autumn season, try out this quick but delicious pumpkin mug cake. It’s simple and easy to make inside your dorm room. It’s the perfect warm snack to enjoy in this chilly weather!

Ingredients

  • 4 tbsp all purpose flour*
  • 2 tbsp white granulated sugar*
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of ground clove
  • ¼ tsp ground ginger
  • pinch salt
  • 2 tbsp pumpkin puree
  • ½ tsp vanilla extract
  • 3 tbsp milk*

Instructions

1. Mix all dry ingredients together in a 12 oz mug.

2. Stir in the milk, pumpkin puree, and vanilla. Mix well, especially the bottom so there are no dry bits stuck at the bottom.

3. Microwave on high for 2 minutes. Top with whipped cream and sprinkle with cinnamon if desired.

Variations

Add in 2 tbsp of semi-sweet chocolate chips for an even sweeter experience!

Try topping your warm mug cake with some vanilla ice cream

You can top it with a quick icing by mixing together 1 tbsp of powdered sugar, 1 tbsp of milk, and ½ tsp of vanilla.

*These ingredients can be swapped out for something that fits your preferences, like oat flour, coconut sugar, or almond milk!
