Dry ingredients:
1 cup old-fashioned rolled oats
1/4 cup flour
2 teaspoons ground cinnamon
Pinch of sea salt
3/4 cup cashews
3/4 cup pecans
1/2 cup walnuts
1/2 cup pumpkin seeds
1/2 cup sliced almonds
¼ cup chia seeds
Wet ingredients:
1/3 cup oil of choice
1/4 cup maple syrup
1 teaspoon vanilla
Instructions:
1) Preheat the oven to 300 degrees F. Line a large baking sheet with parchment paper.
2) In a large bowl, stir together oats, flour, chia seeds, cinnamon, salt, cashews, pecans, walnuts, pumpkin seeds, and sliced almonds. Set aside.
3) Next, add oil of choice, maple syrup, and vanilla extract to a small saucepan and place over low heat, stirring frequently until oil is completely melted. Pour over dry ingredients and mix well until oats are completely coated.
4) Next spread the granola on the baking sheet in an even layer and press down using a spatula. Bake for 35-40 minutes until golden brown and fragrant.
